We’ve been testing recipes from kidney-friendly websites to find meals that are both comforting and easier on digestion. We’d actually been searching for some yellow squash recipes reminiscent of the classic recipe.

We finally came across this Southern squash casserole recipe from (DaVita a website with resources for those suffering with kidney issues ) davita.com. This particular recipe stood out because it’s simple, budget-friendly and was found in a Kidney conscious website.

With a few small tweaks, We were able to make it feel much more GERD-friendly, too.

  • Good comfort-food option without being too heavy
  • Great option for bringing to a potluck dinner or gathering. (other’s without the same dietary restrictions might enjoy this with you. ) This recipe is great for sharing.

When managing GERD, We try to stick with meals that are:

  • Low acid
  • Not overly fatty
  • Mildly seasoned
  • Easy to digest

This casserole worked well because:

🥘 Texture & Taste Review

The texture was soft, slightly creamy, and very comforting.

The squash breaks down nicely when baked, which makes it easier to digest . The crushed unsalted saltines in the topping helped add some contrast to the soft squash.

Flavor-wise, it’s mild (which I actually prefer for GERD), but still satisfying. It’s one of those meals that feels like traditional comfort food without the usual heaviness.

This casserole was still good reheated in the toaster oven – for serving later on the same day. However, we did find this recipe did get a bit soggy and extra mushy for left overs when we reheated it later on in the week.

  • Plain white rice
  • Baked chicken breast
  • Soft bread (low sodium)
